In the province of Zhejiang in the capital Hangzhou, there is a large lake known as Xihu or West Lake.
Along its banks are a variety of villages where the tea farmers produce the best lung ching.
Very young shoots are harvested, which are then pressed by hand in steel pans and heated at the same time.
This Lung Ching has a very invigorating effect and delights with its nutty, chestnut-like character.
